  • 3 tablespoons extra virgin olive oil
  • salt and freshly ground black pepper to taste
  • ¼ cup Giovanni Rana Basil Pesto

Preparation

Preheat the oven to 375°F. Toss the potatoes in a bowl with the olive oil, salt, and pepper, transfer to a rimmed baking sheet and roast until golden and tender-firm, 20-25 minutes. Remove from the oven, drizzle the pesto in top, stir, and return to the oven for 5 minutes.
